OOM for most ensemble plots

Describe the bug

Many of the plots fail with OOM issues. Whilst memory can be adjusted within the individual workflow, it is sensible to have a standard value that works for most variables/plots required.

How to reproduce

Steps to reproduce the behaviour:

1. Run an ensemble plot (e.g. histogram)
2. See that it fails due to OOM
