What does this implement/fix? Explain your changes.
This PR addresses the test failures caused by the release of tslearn 0.7.0. The clustering results for kshape have slightly changed in the upstream package, causing the hardcoded expected values in the test suite to fail.
Changes made:
Updated pyproject.toml: Bumped the tslearn dependency requirement to tslearn>=0.7.0.
Updated aeon/clustering/tests/test_k_shape.py: Updated expected_results, expected_iters, and expected_labels to match the outputs generated by tslearn 0.7.0.

No, but it updates the minimum required version of the soft dependency tslearn to 0.7.0.

I have verified the new expected values locally using tslearn==0.7.0, and the tests now pass.
