I encountered a similar problem. You can use
https://github-stats-extended.vercel.app/api?username=
as a replacement for
https://github-readme-stats.vercel.app/api?username=
and it works for me

I’ve also deployed it on my own infrastructure.
To migrate, replace github-readme-stats.shion.dev with the hostname of your own server.
I suspect the owner paused the deployment on Vercel due to cost reasons, but since this doesn’t use Vercel, platform dependency and cost shouldn’t be a concern.
