[CI] AMD64 macOS 15-intel Python 3 consistently times out

This job currently regularly times out after 60 minutes, here's an example: AMD64 macOS 15-intel Python 3
To make this friendlier for contributors we should either:

• speed up the job
• remove the job
• increase the timeout period

Large memory tests turned out to be the top bottleneck for macOS 15-intel, the slowest single test taking even 28 minutes.

There isn't a good explanation for long build/test times for both macOS 15-intel and ARM macOS 14 yet but this github community discussion is a very good lead to look into: https://github.com/orgs/community/discussions/170682 macos-15 runners slower build times in new version?
