[5.x]: graphiql missing "explorer" mode

What happened?

Description

I'm not sure if this is a bug or a deliberate decision, but the new graphiql interface (which looks superb) is missing the Explorer mode, which is often the only way to navigate a large, usually inscrutable data model.

Could it be re-introduced?

Steps to reproduce

1. Use GraphiQL in 5.7.x

Expected behavior

Should see Explorer tab/button.

Actual behavior

Explorer mode isn't available.

Unfortunately graphiql-explorer hasn’t been updated in several years, and only works with GraphiQL 1.x, so it’s not possible to pull it into GraphiQL 3, which is what Craft 5.7+ ships with.

The new Documentation Explorer is pretty useful; just different.
