I've found a temporary solution is add
<key>UIDesignRequiresCompatibility</key> <true/>
in the info.plist to revert the appearance of iOS 18. To use the new ios 26 ui i need to add NavigationRenderer

TitleView also does not work with our app which uses Shell, running on MacCatalyst on MacOS 26 Tahoe.

We've had to forcefully inject the custom title view into each page during navigation if the OS version is > 26.

This issue has been verified in Visual Studio Code 1.104.2 with MAUI versions 9.0.0, 9.0.82 & 9.0.110. It can be reproduced on iphone 16 using iOS26. I have attached the snap for reference:
