[Feature]: Way to purge old EULA-PDFs to lower backup size

Currently, backup contains old EULA-PDFs even if that item was checked-out hundreds of times after this initial check-out.

Maybe there could be a setting in Admin panel to set how many previous EULA-PDFs are kept in the history for that particular item? When user accepts and item, oldest PDF is deleted from the system. Also, European GDPR forbids to keep data for previous employees and EULA-PDFs may contain signatures.

European GDPR forbids to keep data for previous employees and EULA-PDFs

Let's not go down that particular road. Under GDPR, businesses must keep previous employee/customer data only as long as necessary for specific, legitimate reasons (e.g., references, legal claims, complaints) - and acceptance data, including signatures, could certainly be considered necessary (if one is concerned about lawsuits, etc.) GDPR is pretty vague (or flexible, depending on your perspective) about what is considered necessary, which makes sense, since different companies need different things and their risk profiles are different.

We don't generally use the deleted_at field in the activity log, but I suppose we could consider it for this case. Either that, or mark the record as deleted in the checkout_acceptances table.
