[DOC] Missing type annotation for `assemble_paths`

Apparently, the type annotations are not displayed for assemble_paths, which is kind of problematic since the expected parameters' shape is not trivial to guess...

For reference, here is a function with working type annotation in the docs:

This might be caused to the @no_type_check decorator, but needs further investigation.
