Updated jhipster-realm.json.ejs to handle conditional optionalClientScopes for Keycloak 26+. Added version metadata (keycloakVersion and keycloakMajorVersion) at the end of the JSON to support EJS conditional logic. This ensures that 'offline_access' is properly registered as an optional scope only when required by Keycloak 26 or higher, maintaining backward compatibility with older versions. Fixes Issue jhipster#5508.
Updated jhipster-realm.json.ejs to include conditional logic for optionalClientScopes. This fix ensures that 'offline_access' is correctly handled for Keycloak 26 and newer versions using EJS tags. Added necessary version metadata (keycloakVersion and keycloakMajorVersion) at the end of the file to support the conditional logic. Fixes Issue jhipster#5508.

This PR fixes the realm configuration for Keycloak 26+ by correctly handling optionalClientScopes using EJS conditional logic. It also adds the necessary version metadata to the JSON file. Fixes Issue #5508.
