Update constrains for laminas libraries in composer.json

Description (*)

We need to update all laminas/laminas-* composer dependencies to compatibility with PHP 8.1.

Pay attention (*)

• we only need to update libraries that have a ~8.1.0 constraint.
• we need to keep constraint type (^, ~) and version value (major.minor.patch)
