As we're migrating to 1ES, we now have a credentials scanner in our repo that's flagging the example DB password in our docs.
The keyword 'PLACEHOLDER' tells credscanner to ignore these "fake secrets", so this PR updates our example passwords to read "PLACEHOLDER" instead of giving a concrete password.
