Upgrade to openresty 1.29 and OpenSSL 3.5

Can we get Dockerfile updated for openresty 1.29 and OpenSSL 3.5?

Sure thing. I’ll keep an eye out for both the GitHub tag (for build from source) and their binaries (for upstream).
I saw activity in the upstream repo but I don’t think it is released yet?
