Description
This allows to run the OpenSearch in environments with docker installation in various locations (like from HomeBrew or Rancher Desktop).
Feedback needed:
Should previously used default paths have priority over PATH env variable (backwards compatible) or should PATH env variable have priority with fallback to default paths (more intuitive regarding local setups)
