The self hosting docs (https://docs.honcho.dev/v3/contributing/self-hosting#2-set-up-environment-variables) doesn't mention Honcho uses Gemini by default, and app fails to start if LLM_GEMINI_API_KEY is not set (which is not set in the env template).

Thanks @kidonng! You're right — the self-hosting docs didn't make this clear enough. PR #510 (self-hosting docs overhaul) restructures the entire configuration guide and makes the Gemini API key requirement explicit. PR #500 also adds a targeted clarification for LLM_GEMINI_API_KEY. Closing as addressed by those PRs. See: #510 and #500
