Updates WalletConnect dependencies to version 2.23.1 following the release from WalletConnect/walletconnect-monorepo commit f97223a9.

• @walletconnect/universal-provider: 2.23.0 → 2.23.1
• @walletconnect/sign-client: 2.23.0 → 2.23.1
• @walletconnect/ethereum-provider: 2.23.0 → 2.23.1
• @walletconnect/logger: 3.0.0 → 3.0.1

The @walletconnect/logger update to 3.0.1 was required to fix a TypeScript build error (TS2742) related to pino type inference in LoggerUtil.ts.
