What does this PR do?

Updates Elastic.Clients.Elasticsearch to 8.19.15.

Why is it important?

8.19.x is the LTS branch that supports Elasticsearch 8.x and 9.x clusters. 8.19.x contains a lot of bug-fixes (both in the client and ther underlying transport library) and API improvements. Using this version improves compatibility with solutions that use 8.19.x or 9.x versions of the Elasticsearch client since both branches introduced a lot of breaking API changes.
