🐛 [SDKv3] Removal of viem-adapter

Description

In thor/contracts we have viem-adapter which creates an instance of ViemContract
But in the viem later we have ContractAdapter that creates an instance of Contract

I would suggest to review and we potentially remove viem-adapter from thor layer
